Cherry Berry Slush

Quench summer thirsts with this sparkling fruit drink. 1 (12 oz.) pkg. frozen red strawberries 8 oz. frozen unsweetened pitted dark red cherries 6 oz. can frozen apple juice concentrate, thawed 24 oz. lemon-lime drink (soda) Thaw frozen fruit; do not drain. Place in blender. Strain and discard seeds. Add apple juice and blend until smooth. Freeze overnight. Thaw until slushy and add lemon-lime.

Chicken and Veggie Kabobs

3 tbsp. olive oil 3/4 cup chicken broth 1 lemon (juice only) 1 tsp. garlic, chopped 1/4 tsp. salt 1/2 tsp. rosemary 1/8 tsp. black pepper 2 lb. chicken breast, cut into 1-inch cubes 24 each: cherry tomatoes, mushrooms, small onions Combine oil, broth, lemon juice, garlic, salt, rosemary and pepper. Pour over lamb and vegetables. Marinate in refrigerator several hours or overnight. Put together skewers of chicken, onion, mushrooms and tomatoes. Grill on medium heat 10-15 minutes (turning once), or until internal temperature of chicken reaches 165 degrees. Makes 8

Greek Style Pasta Salad

Ingredients: 16 oz.     Spiral Pasta 2 Cups    Cucumber, Peeled seeded  and diced large 2 Cups    Tomatoes, Diced large 1/2 Cup   Green Onions, Chopped 1/2 Cup   Sliced Black Olives 6 oz.        Feta Cheese Crumbled 2 Cups     Italian Dressing 1 Tbs.      Chopped Fresh Parsley                 Salt and Pepper to Taste 1/4 Cup   Parmesan Cheese Grated Prepare pasta according to package directions. Rinse pasta until cool to the touch. In a mixing bowl combine first six ingredients. Pour dressing over pasta salad. Mix well. Sprinkle parsley and grated cheese, Chill and serve.
Not ready for the weekend to be over with but plus side school is almost out. In search of some activities for my daughter to do over the summer. Karate, ballet gymnastics?

Little Eaters

Do you have picky eaters at home? If you’re concerned about their health, try these sneaky yet easy tricks to healthier eating: Serve smoothies made with non-fat or low fat yogurt to load up on fruit. Fill your spaghetti sauce with diced vegetables, the smaller the better and spread over whole-wheat pasta. Finely dice vegetables or veggie puree to add to your own recipes. Chances are they won’t notice these additions but will still receive all the benefits.
It's been a long day and it's not over my daughters back from her grandmothers house in Mississippi and it's time for school tomorrow and work. What shall I do with the 5 minutes of free time I have?? Wait let's see what I will pack in her lunch box tomorrow??
Garlic Butter Rice anyone!! I recommend Uncle Ben's Garlic and Butter Rice it come in a microwave pouch and is ready in 90 seconds, down side it's a little pricey $1.81 plus tax but when it only dinner for two it makes it worth it.

Lemon Ice Box Pie

These are the items you will need to make a great Lemon Ice Box Pie. 1 Graham Cracker Pie Crust 1/2 cup Lemon Juice 1 14ounce can of Sweetened Condensed Milk 3 Egg Yolks 1 8ounce Container of Whipped Topping Add your can of condensed milk to a mixing bowl. Add 1/2 Cup of Lemon Juice, mix together Add 3 egg yolks Mix in eggs Add mixture to pie crust, bake at 350 degrees for 15 to 20 minutes or until pie sets depending on your oven. Let cool for about 20 minutes. After pie has cooled cover with 8 ounces of whipped topping and enjoy.

The Sunday paper is always a great place to start.
OK, tomorrow is Easter and I am cooking dinner for two instead of three, what we have here is the making of a quick and easy dinner. On the menu tomorrow will be: 1. Parmesan Crusted Fish 2. Garlic Butter Rice 3. Carrot Souffle' Dessert: Lemon Ice Box Pie Recipes and video will be posted of the menu. Any other great food ideas???

This morning for breakfast I was taking my daughter out of town to visit her grandmother, and low and behold Panera Bread. I give them 4 out of 5 stars yahh!!! My daughter loves their breakfast and lunch menu and they have a little something for everyone. I like that they have a lot of options, and if your look to cut a few calories they have many great items. www.panerabread.com/menu
OK it will be breakfast time in a few hours, the first thing that comes out of my daughters mouth is mommy I'm hungry. What should I cook? Or let's be realistic most parents don't have time to cook they rely on fast food restaurant's to feed their kids. Now, don't get me wrong when a parent has time to plan out a meal that's is what's best, but for us who live in the 21st century it's a 50/50 chance that our kids will eat at a fast food restaurant but it is up to us too find the best options. Let's see what tomorrow's options bring.
